What is Zusto?

Zusto is a new, unique and wholesome sugar subtitute that substitutes sugar in a 1-to-1 ratio. When using Zusto the food product will keep the same mouthfeel, the same aromas and the same crunch. Furthermore it has the same flavour experience as sugar.

Zusto is a new and unique combination of several ingredients derived from natural sources, such as polydextrose, plant-based fibers from corn and dissolvable fibres from chicory, with added sweeteners like isomalt, erythritol, sucralose or steviol glycosides. The added sweetener depends on the local law in a country.

Zusto has less than 100 kcal per 100g. That is four time less than sugar. It has a low glycemic index (GI) (less than 35; sugar/sucrose has a GI of 70, glucose/dextrose has a GI of 100) and doesn’t contain any digestable carbohydrates. The glycemic index indicates how quickly carbohydrates are broken down into glucose during digestion and then released into the bloodstream.

Zusto fits into the diet of anyone who wants to avoid eating sugar, but most certainly in that of people suffering from diabetes, overweight or obesity.

Why the name Zusto?

Our product is all about taste, a flavour experience; ‘gustus’ (Latin) or ‘gusto’ (Esperanto). Even the English language uses ‘gusto’ as an ‘indiviual, refined taste’.

Next tot that we’ve always had an interest in sweetness. As Zusto is made by Belgian scientists the name has a Belgian twist as well. ‘Zoet’ is the Belgian word for ‘sweet’. Mixing the ‘z’ in ‘zoet’ with ‘gusto’ makes ‘Zusto’. To increase the recognizability and rememberability, the ‘u’ got an accent: Zusto. It’s short but powerful, 5 letters, 2 syllables. Easy to remember, commercially strong. A name with history and a future.

What is the difference between Zusto and other sugar substitutes?

The most important difference is when Zusto is added to a product, it keeps the same flavour and structure as if it was made it with sugar. Moreover, it has a much lower caloric value.

Why not use stevia?

For the simple reason that using steviol glycosides (stevia is the name of the plant) in sugar substitutes isn’t allowed in all applications in Europe.
We do have a Zusto version availabe for certain industrial applications that uses steviol glycosides.

What are Zusto’s exact ingredients?

What are the possible uses of Zusto?

In most cases where sugar would be used, Zusto can replace sugar.

Can I keep using my current recipes?

You definitely can. Zusto replaces sugar on a 1-to-1 ratio. This way you don’t have to change your recipe. When a recipe calls for 100 gram sugar you can replace it with 100 gram Zusto. It’s that simple!

I’d like to make a merengue. Can I use Zusto?

Yes you can. Just substitute the sugar in the recipe with the same amount of Zusto or even a little less. Do you want to make a classic white merengue? Then choose Zusto Fine Bakery White. The result will be just as flavoursome, crispy and light as the version with sugar. For an optimal result we suggest to bake the merengue at a somewhat lower temperature and to let it dry a little longer.

Can I use Zusto to make a crispy layer on my creme brûlée?

You certainly can. Make your creme brûlée according to your classic recipe and dust a layer of Zusto on top of each serving. Caramelize using a torch or put them under a hot grill.

How about using Zusto for whipped cream?

Zusto and cream mix perfectly. Your whipped cream will even be fuller, firmer and more stable.

Does Zusto mask the flavour of fruit in home made jams or jellies?

On the contrary, Zusto enhances the flavour and scent of fruit.

I baked a cake and mixed Zusto with butter. Now the batter is clumpy. How do I avoid this?

You can avoid clumps in butter by adding Zusto very gradually. To avoid any risk we recommend mixing Zusto with a dry ingredient first, like flour. Afterwards you can easily mix in butter.
You can also mix Zusto with eggs first. Just make sure to mix it on a high speed.

What are Zusto’s health benefits?

Zusto is a source of healthy fibers. It has a low glycemic and caloric value and easily fits into the diet of anyone who wants to avoid or eat less sugar.

I am diabetic. Can I use Zusto?

Zusto fits into the diet of anyone who wants to avoid sugar, whether it is because of diabetes, overweight or obesity.

I am overweight and want to change this. Do I need to avoid all foods containing sugar?

No, you don’t have to, but eating less sugar is a good start. All scientists agree: we eat too much sugar. This leads to a dramatic increase of prosperity diseases like obesity, diabetes and heart and vascular disease. Zusto is ideal for anyone who wants to avoid products that contain added sugar.

I have a vegeterian/vegan diet. Can I use Zusto?

Zusto does not contain any animal products so is perfectly suitable for vegetarian and vegan diets.

Does Zusto contain any allergenes?

Zusto does not contain substances or products causing allergies or intolerances, mentioned in Annex II of Regulation 1169/2011.

Is Zusto kosher?

Zusto can be made kosher on demand.

Does Zusto contain gluten?

No, Zusto is completely gluten free and is safe to use for anyone with a gluten free or celiac diet.

How is Zusto’s quality assured?

Zusto is food grade approved and is suitable for human consumption. It has a GMO-free status and is GRAS or FDA approved in US. Zusto is classified as “Food Ingredients”/ “Food Additives” in the EU. Zusto® is free from any harmful or toxic substances and free from foreign matter. Production and storage are in order to HACCP and ISO 9001:2000.

Can my children use Zusto?

Anyone can safely use Zusto, so children can too. Do make sure they eat enough calories and have a healthy and varied diet.

I read Zusto contains fibres. What exactly are these fibres?

Fibres, mostly derived from corn and chicory are Zusto’s main ingredient. They ensure sweetness, texture and are a source of healthy bacteria.

How did DelRey come in contact with Zusto?

Bernard Poot from patisserie DelRey in Antwerp, Belgium kept getting asked for sugar-free products by his customers. Since sugar-free products used to be a niche market that didn’t have a good solution – current sugar substitutes had too many disadvantages, especially when it comes to flavour and texture – Bernard Poot started looking for other solutions. He found Zusto and started experimenting extensively. The results were very convincing for both him and his customers.

Why are pattissiers and chefs this positive about Zusto?

That is because they don’t have to change their recipes. Zusto substitutes sugar on a 1-to-1 ratio. Furthermore, they can offer a solution to a problem that a lot of their customers have. They can offer products that are low in sugar or fully sugar-free without losing any flavour and texture.

Can hobby chefs use Zusto?

Anyone can use Zusto, so hobby chefs can too. As soon as we have consumer packages (1kg) we will start selling them. Just make sure to always close the packaging well after use or store it in an airtight container/

When will Zusto be commercialized?

In October 2014 Zusto was introduced to press at pattisserie DelRey. On the Day of Diabetics well know chef was the first chef to announce he used Zusto for his products. In the following months Zusto will appear more and more in the marketplace.

What are Zusto’s future plans?

Our goal is for Zusto to eventually be sold worldwide.
